The auberge’s farm on Île d’Orléans, less than 23 km away, supplies seasonal vegetables, fruits, herbs, and salads from April to December. The farm uses organic methods, crop rotation, companion planting, and beehives for natural pollination.

In addition, the hotel focuses on responsible sourcing. It holds Aliments du Québec au menu and Smarter Seafood certifications. It works with producers within 50 km, supports sustainable fisheries, makes breakfast jams in-house, and serves organic maple syrup from a local cooperative. Moreover, rooms feature refillable natural toiletries, and only ecological, biodegradable cleaning products are used.

To further reduce waste, simple daily practices are followed. Extra food becomes staff meals. Nespresso capsules are recycled, paper straws are used, and micro-filtered water reduces plastic bottles and truck deliveries. Old linens are repurposed, masks are recycled through TerraCycle, and used soaps are upcycled by Clean the World. Guests can choose sheet-change frequency to save water. Additionally, energy use is lowered in unused rooms, and electric vehicle charging is available.

Finally, the hotel supports Québec hospitality schools and encourages local employment. As a hotel-museum, it preserves regional history, displays over 800 artefacts, and offers regular tours.
